Happy to know you'll be making the rice balls. I think you'll enjoy them. My grandma's rice balls have been a Christmas Eve staple in our home for over 80 years, from what I've been told. (I've been eating them 50+ years myself.) Her cheesecake recipe and her banana bread recipe will be posted soon, too. Ingredients:
1 lb rice (Carolina)
1/4 stick of pepperoni
1/2 stick of butter softened
1/4 lb mozzarella cheese
3 eggs (separate whites from yolks)
1 tsp parsley
4 tbsp grated cheese
Boil rice, do not overcook, then mix butter into rice. Let rice stand a while to cool off.
Cut pepperoni and mozzarella into small pieces and add to rice with a little salt, pepper, parsley, grated cheese, and three egg yolks. Mix all very well.
Stiffen egg whites. Form above mixture into balls. Roll in flour. Then dip each ball into the egg whites and roll in bread crumbs. Add vegetable oil to pan, and fry until golden brown. Serve. Enjoy!
