Grandma Folkers' Roode Kool (Red Cabbage) recipe
While growing up, Ruth and her siblings often visited their grandparents who had immgrated from The Netherlands in 1922. One of the traditional foods that Grandma Folkers liked to prepare and share was "Roode Kool". Here is her traditional recipe to pass on to her posterity.
Ingredients:
1 medium sized heart of red cabbage
1 large tart apple
1/2 cup uncooked rice
1/4 tsp. cloves
salt and pepper (to taste)
water
1 Tbsp. vinegar
Prepare the cabbage for cooking: wash and shred. Cut the (cored) apple into slices, add the rice and cloves and enough water to cover. Steam for about two hours. Mash and add vinegar to restore color. Serve Hot.
