Mom's Holiday Salad
This recipe was contributed by Gloria Schneider (Ruth's youngest daughter) for THE THIESSENS FAMILY REUNION COOKBOOK - 2000. She writes "This recipe is one that my mother - Ruth Meacham - often made for Thanksgiving and Christmas when we were growing up. I can't help but think of the good memories every time I make it, which is usually during the holidays."
Ingredients:
1 pint whipping cream
1 pint sour cream
1# large marshamallows
2 #21/2 cans pineapple chunks, well drained
Shreaded coconut
Chopped pecans
Quartered maraschino cherries
Cut Marshmallows into quarters (scissors make this an easy task) and set aside. Whip the whipping cream, then add the sour cream and whip enough to blend well. Fold in marshmallows and well drain pineapple. Top with cocnut, chopped pecans, and quartered maraschino cherries. Cover with aluminum foil or plastic wrap and refrigerate at least overnight before serving. Makes a nice big bowl.
